Spicy noodles are a house favorite. Original recipe from Lutheran Volunteer Corps cook book. These noodles can be made on any budget with any vegetables you have, and they are delicious every time. The creamy, spicy peanut sauce hits the spot.

SAUCE
3 T. Peanut butter
3 T. water
1/4 c. soy sauce
2 T. brown sugar
3 cloves garlic minced
2 tsp crushed red pepper
1 tsp, lemon juice
1 bay leaf
VEGETABLES and PASTA
Veggies of choice
Pasta of choice or rice
1) To make the sauce, combine peanut butter, water, soy sauce, sugar, garlic, red pepper, lemon juice, and bay leaf in a bowl. Cover and set aside to marinate (2 hours or longer if possible).
2) Prepare your vegetables by sautéing or steaming chosen vegetables (whatever you have. Ideas: carrots, cabbage, onion, potato, cauliflower, broccoli, etc.) until done.
3) Prepare noodles or rice by following directions on package.
4) To serve, pour sauce over vegetables and mix well. Add noodles and mix or serve over rice.
