Mom's Pumpkin Bread and Muffins - Elyse Blank '21

Background

My mom makes this for every Thanksgiving celebration, so when I went abroad last fall I made this recipe three different times for my three different Thanksgivings and didn't get any complaints. A very simple recipe that will make your kitchen smell amazing and your taste buds happy.

Equipment

    • Bread tin or muffin tin

Ingredients

  • 2 cups white sugar

  • 4 eggs

  • 1 cup oil

  • 2 and a half cups flour

  • 1/2 teaspoon salt

  • 1 teaspoon nutmeg

  • 1 cup packed brown sugar

  • 2 cups pumpkin (shredded/pureed)

  • 2/3 cup water

  • 2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ground cloves

Instructions

1) Mix all ingredients together and bake at 350°F in greased/floured tin

Note: If using a bread pan bake for 1 hour and 10 minutes, and if using a muffin tin bake for 25 minutes
