Almond Four Brownies - Abbey Sanborn

Background

I love blondies! When I had to go gluten free, I feared I would never have one again. This recipe is so good that no one can tell it's gluten free!

Equipment

    • 9 x 13 inch pan

    • Something to mix with (stand/hand mixer is easiest)

    • Large bowl

    • Parchment paper is helpful but not necessary

Ingredients

  • 1/2 cup butter

  • 3/4 cup brown sugar

  • 1/2 cup white sugar

  • 2 eggs

  • 2 teaspoons vanilla

  • 1 3/4 cup almond flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 1/2 cups mix-ins (chocolate chips, peanut butter cups, chocolate covered caramels, M&M's -- really anything tasty!)

Instructions

1) Preheat oven to 350 degrees. Either line pan with parchment paper or butter and "flour" (with almond flour) pan.

2) Cream better and sugars together for 1 minute. Add eggs and vanilla and mix on high until light and fluffy (about 3 minutes). Add almond flour, baking powder, and salt and mix to incorporate. Stir in mix-ins.

3) Pour batter into pan and smooth out. Bake for 20-25 minutes until golden brown (if you stick in a toothpick some crumbs will come off on it, but it will not still be soupy).
