I love blondies! When I had to go gluten free, I feared I would never have one again. This recipe is so good that no one can tell it's gluten free!
9 x 13 inch pan
Something to mix with (stand/hand mixer is easiest)
Large bowl
Parchment paper is helpful but not necessary
1/2 cup butter
3/4 cup brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla
1 3/4 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups mix-ins (chocolate chips, peanut butter cups, chocolate covered caramels, M&M's -- really anything tasty!)
1) Preheat oven to 350 degrees. Either line pan with parchment paper or butter and "flour" (with almond flour) pan.
2) Cream better and sugars together for 1 minute. Add eggs and vanilla and mix on high until light and fluffy (about 3 minutes). Add almond flour, baking powder, and salt and mix to incorporate. Stir in mix-ins.
3) Pour batter into pan and smooth out. Bake for 20-25 minutes until golden brown (if you stick in a toothpick some crumbs will come off on it, but it will not still be soupy).
