This recipe is used all over West Africa, but especially in Mali, Burkina Faso, Ivory Coast, Ghana and Senegal. Here is a link to a "MacTalks" YouTube video of me making West African peanut sauce which includes a lot of history.
Frying pan/skillet
Medium size pot
Cutting board
Knife to slice onion
2 cups water
2 cups natural peanut butter
1 white onion
1 8-oz can of tomato paste
1 14-oz can of diced tomatoes
2 tbsp peanut oil
1 16-oz package of spinach
2 cubes vegetable bouillon
Salt to taste
Rice (to serve over)
1) Boil 2 cups water and then add 2 cups of natural peanut butter
2) Let simmer
3) Meanwhile, dice onion and place in a skillet. Cook until soft and translucent (5-7 mins)
4) While the onion is cooking, add diced tomatoes, tomato paste, and peanut oil to peanut sauce
5) When the onions are done, add them as well as spinach to the peanut sauce
6) Add salt and vegetable bouillon to taste
7) Serve over rice with the hot sauce of your choice
