5 medium onions
Knob of butter
1 liter beef/veg broth
Crusty baguette
Parmesan/gruyere
Cup of dry white wine
Thyme
1) Chop your onions (no need to dice).
2) Melt some butter and oil in a big pot, then add your onions. Then occasionally stir and let your onions get super-soft, mushy, and brown colored (this process takes like 40 minutes, but it is worth it!).
3) Add your beef broth, wine, and some thyme sprigs. Let this soup reduce for 20ish minutes or to whatever consistency you prefer.
4) Place some soup in oven-safe bowls, add your crusty baguette bread floating on top.
5) Grate as much cheese as you like (I think it's better with lot of cheese!).
5) Put in the oven for 2 minutes MAX on broil. And voila!! You have your French Onion Soup! Oui oui!
