Peach (or Apple) Crisp

Background

This is one of my family's favorite mid-summer/early-fall recipes. Though it can be enjoyed all year round, it's best made with crisp, fresh apples at the beginning of September or local peaches in early July. Regardless of what fruit you use, the crisp is always better with a scoop of vanilla ice cream or a non-dairy alternative. If you're extra daring, throw some raisins in the bottom of the pan along with the sliced fruit for a more interesting flavor.

Equipment

    • 8x8 or 9x9 glass baking dish

Ingredients

  • 3-4 apples or 5-6 peaches (you can add some raisins or dried cherries too!)

  • Oatmeal (3/4 c)

  • Flour (1/2 c)

  • Brown sugar (3/4 c)

  • Cinnamon (1 tsp)

  • Butter (1/2 c, softened)

Instructions

1) Slice the fruits into moderately-sized pieces and spread them across the bottom of the baking dish, covering it completely.

2) In a separate bowl, cut the remaining ingredients together with a fork; uniformity isn't necessary.

3) Evenly sprinkle the mix over the sliced fruit in the baking dish, covering it all.

4) Place the dish in a cold oven

5) Bake it at 350° F for 35-40 minutes. Enjoy!
