Cauliflower Potato Salad - Ashley Allen '21

Background

My mom, having grown up in the Midwest, wanted a healthier and allergy friendly version of our extended family's potato salad.

Equipment

    • Bowl

    • Pot to steam cauliflower in

Ingredients

  • 1 large cauliflower

  • 1 cup celery diced

  • 3/4 cup vegan mayo (or regular mayo)

  • Dill

  • 2 diced hardboiled eggs (optional)

  • Lemon juice

  • 1 tablespoon dijon mustard

  • 1 tablespoon spicy brown mustard

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon paprika

  • Pepper

Instructions

1) Steam the cauliflower until slightly soft, let rest until cool

2) Add the rest of the ingredients to the bowl with the cauliflower

3) Add more seasoning depending on personal preference

4) Chill in the refrigerator and enjoy!
