The Senior Culinary Arts Project (SCAP) is a comprehensive, year-long, project that incorporates different academic disciplines applied to real world managerial tasks within the field of Culinary Arts. The project is centered around a singular world cuisine which is chosen by the student. Sometimes students choose a cuisine that they are very familiar with, even grew up immersed in, to respect tradition and gain a deeper understanding. Other times students choose a cuisine that they are fascinated with or know little about so that they can experience it firsthand. In both cases the work is always driven by curiosity and a pursuit of excellence.
