Here at Grasso Tech we have 12 trades that prepare students for work in various industries. 11 of those are 4 year programs that the students begin to visit in exploratory starting at the beginning of their freshman year. However, we do have one additional program, Guest Services Management, that is open for rising 11th graders from local high schools who are looking to develop their customer service, and hospitality skills in the present workforce which demands these skills in every industry.
Of course we are very proud of our Culinary Arts Department. Years ago, I co-taught with the department head of Guest Services Management, Mr. Chris Jones. It was my pleasure to spend a few years integrating both the Culinary Arts and Hospitality curriculum together with him to our classes as they came through the program. Once we entered the new school building in the fall of 2019 the programs were separated and Guest Services Management became the two year program that it is today.
What does this have to do with waffles you may ask? Well, I have been thinking a lot about exploratory lately as it has dominated my time here in class for the last three months and I was remembering back to some of the activities that Mr. Jones would like to do with the students to excite them about the industry. One of his favorite activities was to have the kids make waffles. Because of this I thought that not only would it be fun to offer something new to the staff, but I was sure that Mr. Jones would love the idea!
Though we are separate departments, we rely heavily on our professional interactions with the Guest Services Management department. They are the "front of the house" to our "back of the house". They deliver the food, set and wait on guests, take reservations, and help to coordinate the pick up of our weekly food2go selections. We truly appreciate their work.
I found a book published by the C.I.A. on breakfasts and brunches and decided to have one of my sophomore students, Kim, test out the recipe on one of our new waffle irons. With a few tweaks and practice runs, the recipe was ready to go. Just like everything that we do here, this recipe also gives us a chance to reinforce different skills, in particular whipping egg whites. The airiness cannot be matched without them!
