This is a variation of the raspberry almond galette that Standard Baking of Portland, ME sells. My first trip to the city I ate at a restaurant called Central Provisions for a light dinner, lunch at Duck Fat and breakfast at Standard Baking. The first thing I tried was their galette. It was such an interesting surprise when I bit into it to see the layer of raspberry jam, so sweet and delicious. Also, the crumble of the sable dough (a dough that mostly resembles a shortbread cookie) was the perfect foil to the filling. I loved it instantly. This is one of my go-to, must-have pastries when I am in the area.
