Welcomed by such an appealing and vast “antipasti bar”, the customer finds in this restaurant, situated at the top of the San Saba hill, a way to explore “con gusto” the nice array of local Mediterranean dishes enlisting fish garnished pastas, fresh fish entrees as well as some of the more renowned arrangements of good quality meat. For those who crave instead the thinly made Roman Pizza, “Al Callarello” responds with its wood oven baked traditional delicacies. Inside the restaurant as well as outside during the warm season, the ambiance is pleasant and friendly.

The family that runs this restaurant welcomed me with open arms; I instantly felt like I was a part of the group. They were patient with me as I learned the ways of the restaurant and how to speak Italian. I was immediately put to work through taking orders from English-speaking customers, opening wine bottles, and taste-testing the many signature dishes that they serve at Al Callarello. I thoroughly enjoyed serving the beautiful pasta dishes that Sandro made and the delicious pizzas from Mimmo.
In order to fully optimize my experience as a server at Al Callarello, I made a conscious effort to speak with and get to know my coworkers and the regulars at the restaurant. I always gave my best effort to provide the customers with a positive experience and ensure their satisfaction by making recommendations and finding something to talk to them about.
Overall, I had a great level of communication with the sponsors because we all worked together, and I felt as if we were working together on the same plane for a common goal of providing exemplary customer service every day. In order to ensure a successful and positive experience for future interns, I would highly recommend a positive working attitude while also making a conscious effort to get to know the people you work with.
Embrace the cultural differences from working in a restaurant in the United States to working at Al Callarello. They are truly so excited to have you working there, and so are the customers. Take the time to get to know people, it is definitely worth it!"

“I interned at the small family owned restaurant "Al Callarello", located near the Basilica di San Saba, which is across from the Aventino hill and is very close to the convent.
Al Callarello itself is a relatively small restaurant with a large outdoor seating area and a smaller inside restaurant, where the kitchen and a few other seating areas are located. The restaurant has a wide variety of traditional Italian foods, including pizza, classic Roman dishes like cacio e pepe, carbonara and supplì, as well as amazing seafood and secondi piatti dishes. By far one of the biggest perks of this internship is the ability to eat a lot of amazing Italian dishes during work.
The work I did would vary day to day, as I only worked in the Kitchen during my time there. Normal duties in the beginning are relatively simple like cleaning parts of the kitchen and running/washing dishes and pans. However, as you get more comfortable and if you show some interest in learning, you start doing some prepping work such as peeling potatoes and preparing other vegetables, working with seafood (gutting and cleaning fish and other types of seafood like clams, mussels, shrimp etc.) and making the fried foods as the orders come in. Al Callarello is very much a local, family run establishment and that is one of its many charms.
The restaurant itself is run by Angela and Andrea who are both very helpful and welcoming when it comes to your overall internship experience, a visit from Angela's mother or father whom are both in their 70's is a regular occurrence. The kitchen staff and servers are made up of a lot of different people. The main cooks in the kitchen are Sandro, Rashid and Ali. Sandro can be slightly intimidating at first but is very funny when you get to know him. Rashid and Ali are always laughing and smiling and are there to help you when you need instructions.
A sentence to summarize my experience would be "Learning the best way to connect to Rome and Italians is through cooking and cleaning".
This experience is one of the most fulfilling and immersive internship options that Trinity Rome has to offer and that anyone who wants to really feel immersed in an Italian community should do it. However, I believe that it is not for everyone. First, what is your Italian level: a very basic background in Italian is something I would recommend coming in. This internship unlike many others on the program, is slightly physically demanding and at times can feel repetitive.
If you are able to go in with the right mindset and appreciate that you are having an extremely unique life experience, not only will your Italian improve or will you understand Italian culture better but you really can become a part of a unique family and have a connection with Italy you wouldn't normally experience during a traditional study abroad experience.”
