Ingredients
2 rashers bacon
50g mushrooms
½ onion
Stock cube
100g arborio rice
Parmesan and parsley to garnish (optional)
Method
Fry 2 rashers bacon until crispy and 50g mushrooms until soft then add tbsp lemon juice and set aside.
Meanwhile, cook ½ onion in a pan and make up 300ml stock.
Add 100g arborio rice to the onion, then add the stock a little at a time stirring, this will take a while, be patient!
Add the mushroom and bacon back in and stir thoroughly.
Top with parsley and parmesan cheese (optional.)
