Ingredients
·1 onion
·3 mushrooms
·½ pepper
·1 tomato
·150g long grain rice
·Stock cube
·50g frozen peas (it’s fine if they defrost)
·1 tbsp curry powder
·A suitable tub to take your rice home
Method
Prepare all your vegetables.
Cook your onions in a large pan with a tbsp of oil until soft.
Add the mushrooms and pepper and cook for another 2 mins.
Make up 550 mls of stock.
5. Add the 150g of rice to the pan.
6. Pour in stock, 50g peas and tbsp of curry powder.
7. Simmer for 15 mins or until the rice is tender. Don’t let your pan go dry, add more hot water if needed
8. Transfer to tub and sprinkle tomato on top.
NB - You can add other vegetables, meat or seafood to your rice.
