Ingredients
400g of frozen fish – Fish pie mix
400ml milk
2 eggs
80g butter
40g plain flour
1kg floury potatoes
50g cheese
50g Peas
2/3 Tbsp. Capers (Optional but delicious in a fish pie)
Method
Preheat the oven to 200C/180 fan/gas mark 6.
Peel and halve/quarter the potato.
Put the potatoes in a saucepan and pour over enough water to cover them.
Bring to the boil and then simmer until tender. (approx. 15 minutes)
Cut your fish into bite sized chunks
Melt 40g butter in the saucepan. Then stir in the 40g flour. Cook for 1 min
Add the 400ml milk bit by bit. Whisking to get rid of any lumps.
Add the fish and cook gently on a low heat for 5-7 minutes.
Take off the heat and stir in the ½ cheese, capers and peas.
Spoon into an ovenproof dish.
Drain and mash the potatoes, adding milk and remaining butter.
Spoon on top of fish mixture and sprinkle with grated cheese.
Bake in oven for 20-25 mins, until golden brown on top and bubbling hot.
