Super simple to pop in the oven and get on with something else whilst it's cooking. You can, of course, substitute ingredients to your liking.
Ingredients
6 chicken thighs or 3 chicken breasts halved lengthways
200g basmati rice
4 tbsp curry paste - any flavour
Can of coconut milk
1 onion
1 pepper
2 garlic cloves
2 tsp curry powder
1 tsp ginger
½ tsp cumin powder
2 tsp caster sugar
1 chicken stock cube
Method
1.Add 200g of washed basmati rice to a casserole dish, 4 tbsp curry paste, 1 sliced onion, 1 sliced pepper and 2 diced garlic cloves.
2.Then add a can coconut milk, 6 chicken thighs.
3.Season with 2 tsp curry powder, 1 tsp ginger, ½ tsp cumin powder and 2 tsp caster sugar. Give it a good mix.
4.Finally, add 150 ml chicken stock.
5.Cover in foil and bake at 180 c,check after 30 mins and stir. Add another 50ml water if it's looking dry. Bake for another 30 mins.
