Ingredients
Meringue
4 egg whites
200g caster sugar
1 tsp white wine vinegar
1 tsp cornflour
1 tsp vanilla extract
For the topping
1 x punnet of strawberries or raspberries
1 tbsp icing sugar
300ml double cream
Method
Preheat oven to 120ºC or gas mark 1
2.Using a pencil draw discs on parchment by drawing around a cup or biscuit cutter.
3. Whisk 4 egg whites with a hand mixer until they form stiff peaks.
4. Then whisk in 200g caster sugar, 1 tbsp at a time, until the meringue looks glossy.
5. Whisk in 1 tsp white wine vinegar, 1 tsp cornflour and 1 tsp vanilla extract.
6. Spread the meringue inside the circle, creating a crater by making the sides a little higher than the middle.
7. Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside the oven.
8. Whip 300ml double cream with the 1 tbsp icing sugar and spread it over the meringue.
9. Top with fruit then dust with icing sugar.
