More easy egg recipes for the college student
As part of his series of blogs to help college students lead a healthier lifestyle, Garry Y. Itkin has included several tasty recipes for easy-to-prepare meals.
For this blog, he shares two egg-based recipes that are sure to provide some much-needed nutrients for the incredibly active college student.
Mixed green salad with eggs
It takes only 10 minutes to prepare this meal. Here are the ingredients.
- 1 pack or 5 ounces of baby lettuce mix
- 4 plum tomatoes (sliced)
- 4 hardboiled eggs (quartered, lengthwise)
- ½ cup part-skim mozzarella cheese (shredded)
To come up with four servings, divide the lettuce evenly in four plates and top each with sliced tomato and four egg wedges. Sprinkle each plate with 1 ½ to 2 tablespoons of mozzarella cheese.
Spring salad with eggs
This spring salad is another great meal that Garry Y. Itkin suggests students prepare during the weekends and store in the fridge. It takes about 25 minutes to make the meal. The ingredients are:
- 3 to 4 hardboiled eggs ½ avocado
- 12 pieces of cherry tomatoes (halved)
- 1 pound of mixed lettuce greens (washed and dried)
- 3 tablespoons of quick-pickled red onions
- 3 tablespoons of sweet and sour pickled radishes Bacon slices
For the vinaigrette:
- 2 tablespoons pickling vinegar
- 2 teaspoons Dijon mustard
- ¼ cup of extra-virgin olive oil
- A pinch of kosher salt and fresh ground pepper
To prepare the vinaigrette, mix the vinegar, mustard, and a pinch of salt and pepper in a jar. Add the olive oil in a slow and stable stream and whisk it until mixed thoroughly.
Put the salad greens, tomatoes, avocados, bacon, onions, and radishes in a large salad bowl. Pour a small amount of vinaigrette and toss until mixed. Place the eggs on top.
