Spanish Influence & Evolution of Lechon Kawali
Lechon kawali is a Filipino crispy pork belly dish influenced by Spanish lechón (roast suckling pig). However, instead of roasting the entire pig, Filipinos deep-fried pork belly to create a quicker, home-cooked version of lechón.
To maximize leftovers, Filipinos later chopped up crispy lechon kawali and mixed it into fried rice, creating lechon kawali fried rice—a hearty, flavorful dish.
Modern Adaptations
This dish has become a restaurant favorite, often served with garlic, onions, soy sauce, and sometimes egg. Some versions add chili flakes or pickled vegetables for extra flavor.
Cultural Significance
