Kare-Kare (Pork)
Ingredients:
1 kg pork, cut into pieces
1/2 cup peanut butter
1/4 cup ground rice (for thickening)
1 bunch string beans
1 banana blossom, sliced
1 eggplant, sliced
4 cloves garlic, minced
1 onion, sliced
1 tbsp annatto oil (or achiote powder for color)
1/4 cup shrimp paste (bagoong) for serving
Salt to taste
Instructions:
Boil the oxtail until tender (about 2-3 hours).
In a pan, sauté garlic and onion, then add the peanut butter and ground rice, mixing well.
Add the oxtail broth to the pan and simmer for 10-15 minutes.
Add the vegetables and simmer until tender.
Season with salt to taste and serve with shrimp paste on the side.
