Maja Blanca (Coconut Pudding)
Ingredients:
1 can coconut milk
1 can evaporated milk
1/2 cup cornstarch
1 cup sugar
1/4 cup roasted peanuts, chopped (optional)
Instructions:
In a saucepan, combine coconut milk, evaporated milk, sugar, and cornstarch. Cook over low heat, stirring constantly until thickened.
Pour into a mold and allow it to set for a few hours.
Top with roasted peanuts before serving.
