Lechon (Roast Pork)
Ingredients:
1 whole pig or pork belly (about 5-7 kg)
3-4 cloves garlic, minced
1 onion, quartered
1 bunch lemongrass, tied in a knot
1 tbsp soy sauce
1 tbsp salt
1 tsp pepper
1/4 cup vinegar
1/4 cup oil for basting
Instructions:
Marinate the pork in a mixture of soy sauce, vinegar, garlic, onion, salt, and pepper for at least 4 hours or overnight.
Stuff the cavity with lemongrass and garlic.
Roast the pork on a spit or in an oven, basting with oil every 30 minutes.
Roast for 4-6 hours or until the skin is crispy and the meat is tender.
Serve sliced with liver sauce.
