Late Summer Peach and Tomato Salad
1/4 C sliced red onion
1/2 lb ripe peaches, pitted and cut into wedges
1/2 lb ripe tomatoes, cut into bite-sized pieces
1 TB apple cider or balsamic vinegar
1 t olive oil
1 t honey
1/8 t salt
1/8 t freshly ground black pepper
1/4 C (1 oz) crumbled feta or goat cheese
2 TB chopped basil
1/4 C toasted chopped pecans (optional)
1. Combine first 3 ingredients in large bowl.
2. Combine vinegar, olive oil, honey, salt, and pepper in small bowl, stirring with a whisk. Drizzle vinegar mixture over peach mixture; toss well to coat. Sprinkle with cheese and basil.
