THREE BEAN SOUP

A very good way of using up the over-sized french beans. When made it has an odd green colour but tastes very good.
Ingredients list
1 litre vegetable stock
1 medium onion
1 clove garlic
225 grams green beans (chopped into 1cm pieces)
350 grams broad beans
425 grams borlotti beans
Salt & pepper
How to
1/ Fry onion & garlic in butter
2/ Add stock and all the beans then boil for 5 minutes.
3/ Simmer for 15 minutes.
4/ Blend smooth with a stick blender.
This makes a smooth soup, if you want it a bit lumpy, remove a mug of the mix before blending and return after.
MAKES 15 LADLES OR 5 BOWLS OF SOUP
