Blackcurrant Jam
About
I used mixed coloured fruits for this from the allotment, that I had frozen over the season. This amount made 5 lb jars
Ingredients list
1 kg Fruit
1 kg Sugar
300ml Water
35 g Lemon Juice (App 1 lemon)
How to
1 Remove stalks from fruit, (or thaw if frozen) Boil for 10 – 15 mins in the water and lemon juice
2 Add sugar and rolling boil until temperature reached on jam thermometer, or wrinkles on a cold plate from the freezer.
3 Bottle up in warmed, sterilized jars.
