A great recipe given to me by friend who had lived in Germany for a few years, I was not sure about red cabbage until I was given some of this to try and it was great. So good in fact, the next year I grew my own red cabbages and made a large batch to portion up in the freezer.
Ideal for Xmas or good with strong meats like venison.
The Ingredients below are as given to me, In brackets are the adjustments I made, as I'm not a lover of woody bits of herb and spice mixed in with the food.
Ingredients
1 kg of thinly sliced red cabbage (About 1 cabbage)
375g of sharp apples, peeled and chopped (2 cooking apples)
2 Onions, finely chopped
1 bay leaf (Omitted)
3 cloves (Used level tea spoon of powdered cloves)
3 Juniper berries (Omitted)
5 Allspice (teaspoon of powdered)
2 sticks of cinnamon (2 rounded teaspoons of powder)
4 Tablespoons of red wine vinegar (I only had pickling to hand but used less and it worked)
3 Tablespoons of redcurrant jelly ( I used a small jar of )
125 ml of water
Sugar (I used rounded tablespoon of brown sugar, but use what you have)
Salt, pepper to taste.
Oil
Method
Saute onions in oil
Add cabbage and apple , fry for a few minutes
Add spices, jelly and water etc
Cook over a low heat for 45 - 60 mins
If needed season again with salt pepper and sugar.
Serve or freeze for the big day.
