About
The old favorite using leftover chicken from the Sunday roast and a mix of veg and pulses
Ingredients list
2 pints chicken stock
1 cup soup mix
1 large chicken thigh or equivalent (cooked)
3 medium potatoes
2 medium carrots
2 sticks celery
½ cup borlotti beans or broad beans
Sprinkle of frozen peas
½ cup mashed potato (optional)
How to
Soak the soup mix and borlotti beans (if used)
overnight.
Finely chop potatoes, carrots and celery.
Add all of the above to the chicken stock and bring
to the boil. Add chopped chicken, frozen peas and
salt to taste.
Add mash potato to thicken if required.
MAKES 18 LADLES OR 6 BOWLS OF SOUP
