Beetroot and Bramley + horseradish Soup

Good way to use up beetroot left in the garden after summer salad season
Ingredients list
500g fresh beetroot
2 medium Onions chopped
1 Tbsp oil
2 Bramley Apples, peeled, cored, lemoned to prevent browning
1 ½ litre chicken or vegetable stock
2 Star Anise
Snipped chives
Salt + pepper
1 tsp Horseradish sauce
1Tbsp Yoghourt
How to
Cook Beetroot
Sweat onions in oil
Add apple and beetroot
Add stock and star anise
Simmer 15 – 20 mins
remove star anise pods
Blend with stick blender
Add yoghourt mixed with horseradish sauce as a swirl in the bowl.
