Mmmm These are the hot cakes that go like hot cakes.. My Mum's recipe and perhaps her mum's as well.
I'm told that "real" rock cakes are not made in a case but just slapped put on a flat tray, I tried this and they turned out hard and dry. So "granny knows best" and my cakes are made this way, cos there better :-)
A simple and quick cake to make.
They go quicker than I can click!
Ingredients
To make 12 cakes
Flour 12oz
Butter 4oz
Sugar 4oz
Sultanas 4oz
Eggs x 2
Method
In a large mixing bowl, rub together the Flour and the butter, Then add and mix the rest of the ingredients, If the mix looks to wet, add more flour and if to dry add a spot of milk. Spoon/dollop out into cake cases in a cake tray or directly into the tray if greased with butter.
Cook
Place in a pre-warmed oven at gas mark 4 or 180 deg for about 20 mins, watch them near the end as cooking time can vary, if you put your finger in the middle of a cake and press down they should be firm - remember they are not a sponge cake (which spring back). leave to cool if you can...
