Ingredients list
170g (6oz) Self Raising Flour
114g (4oz) Soft Margarine
170g (6oz) Caster Sugar
2 Eggs
4 tbsp Milk
1 Lemon, zest and juice
Topping
114g (4oz) Icing sugar
The juice of the lemon
How to
Mix ingredients in a bowl
Tip into a lined 2lb loaf tin
Place in the centre of a cold oven set to 190 degrees for app. 50 mins
Test with skewer, to see if cooked. (It will come out clean if cooked)
If cooked inside, prick all over with skewer
Pour topping all over so it soaks into the cake
Then leave to go cold
*Zest can be sprinkled over top when putting topping on, to give a zizz.
