CARROT SOUP

Ingredients list
8 medium carrots
1 large onion
3 cloves garlic
1tsp ground cumin
1tsp ground coriander
1 tbs coconut oil
400ml coconut milk = 1tin
500ml vegetable stock
Juice of ½ lemon
Sea salt & black pepper
How to
Fry onion in oil until soft then add garlic and fry for
a couple of minutes. Add chopped carrots, coconut
milk and stock and stir, then simmer for 20 minutes
until tender. Stick blend and add salt, lemon juice
and black pepper. Can add smoked paprika if
wanted.
MAKES 15 LADLES OR 5 BOWLS OF SOUP
