Strawberry Jam

Strawberry Jam Recipe

Here's what you will need for the recipe:

2 quarts Strawberries (8 cups)

1/4 cup Lemon juice

1 pouch of pectin (dried or liquid)

7 cups of sugar

Canning Jars (with rubber seal lids)

Vinegar

1.Start by removing the stems from your strawberries and rinsing them thoroughly.

2. Place them in the blender and pulse until crushed.

3. Place strawberries, lemon and pectin in stock pot and bring to boil stirring every few minutes to prevent burning. Boil for 2 minutes.

4. Add sugar to strawberries and dissolve. Bring to rolling boil stirring constantly, boil for 1-2 minutes. Skim foam if needed/ wanted.

5. Ladle hot jam into clean jars leaving 1/4" head space, dip a paper towel into some vinegar and go around the rim of every filled jar to remove any spilled jam on the edge. Place lid and cap on and tighten.

6. Bring stock pot of water to boil and process for 10 minutes. Remove jars from hot water and place in a cool place free from drafts. Leave undisturbed until cooled through and normal temperature. You will hear the lids click or ping as they self seal themselves. Once cool you can check them by pressing the button on the lid. If it clicks you need to re-process them in the water canner until properly sealed.
