Garlic Ginger Stir-Fry

1 lb boneless skinless chicken, cut into 1" pieces

2 tbsp minced garlic

1 tbsp minced ginger

2 tbsp olive oil, divided

3 tbsp honey

3 tbsp soy sauce

2 bell peppers, red and green

1/2 bag frozen stir-fry veggies

green onion, chopped

In a large non stick skillet, heat 1 tbsp olive oil. Add chicken, salt, pepper, and garlic.Onced cooked through remove from pan and keep warm. Add the last tbsp olive oil and veggies. Saute for 4-5 until tender. Add chicken, ginger, honey & soy sauce to pan and heat through making sure to coat all pieces in sauce.

Serve hot over white rice*
