Old Fashioned Potato Rolls with Rosemary

RECIPE BY CONFESSIONS OF A NEW OLD HOME OWNER

2 - .25 oz pkgs of yeast

1/4 cup warm water

1 cup potato water

1/2 cup butter, softened

1/2 cup sugar

1/2 tsp salt

2 eggs, beaten

4 cups all purpose flour

1 tbsp fresh rosemary

Dissolve yeast in warm water, set aside. In medium bowl, combine potato water and butter until blended before adding sugar and salt. Stir in dissolved yeast and then eggs. Gradually add in flour and rosemary. Shape dough into ball and place in a greased bowl, cover with plastic wrap and allow to rise in a warm place for 1 hour or until doubled in size. Punch down and shape into 2" balls. Place on greased baking sheet. Allow to rise until doubled in size again. Bake at 375*F oven for 15 minutes. Watch carefully so the bottoms don't burn.
