Meatless Burrito Bowl

Makes 2 servings *440 calories / 4 grams of fat*

2 cups cooked brown rice

1/2 cup salsa

1/4 cup black beans

2-3 roma tomatoes, seeded and diced

1/4 cup corn

Spring mix

Napa cabbage

Green onion, chopped

onion, chopped

bell pepper, chopped

cilantro, chopped

Chic peas

taco seasoning

Dressing:

1 cup plain Greek yogurt

1/2 cup milk

1 packet of ranch mix

chipotle hot-sauce to taste

Directions:

1. Place chic-peas in a saucepan and season with taco mix. Cook until heated through and set aside.

2. Mix together your rice and 1/8 cup of the salsa and divide rice mix between two bowls. Top with chic-peas and place spring mix / napa cabbage on top. Top with remaining salsa, beans, corn and desired toppings. Sprinkle 1-2 tbsp of chipotle ranch on top and enjoy!
