Double Chocolate Amaretto Brownies { with Butterscotch Rum Sauce }

RECIPE BY CONFESSIONS OF A NEW OLD HOME OWNER

Ingredients: (Double Chocolate Amaretto Brownies)

4 large eggs

1 ¼ cup cocoa powder

1 tsp salt

1 tsp baking powder

1 ¼ tsp instant coffee powder

1 tbsp. vanilla

2 sticks of butter

2 ¼ cup sugar

1 ½ cups flour

1 cup amaretto

½ cup dark chocolate chips

Directions:

Grease a 9x13" pan lightly. In a large bowl mix together the cocoa, flour, salt, baking powder, instant coffee and sugar. In another bowl mix together eggs, vanilla, melted butter, and amaretto. Gradually add to the dry flour mixture and mix well so no lumps are left. Place batter in pan and sprinkle with chocolate chips. Bake at 350* for 30-40 minutes, or until a tooth pick comes out clean when inserted into the middle.

Meanwhile you can start on your Butterscotch Rum Sauce:

Ingredients: Butterscotch Rum Sauce:

2/3 cup heavy cream

5 tbsp + 1 tsp butter

1 cup brown sugar, tightly packed

2 tbsp honey

2 tsp vanilla ext

2 tbsp rum

Put everything together except rum, in a saucepan on low heat and boil gently for 10 minutes stirring every once in a while until nice and thick. Remove from heat and stir in rum.

Dust brownies with Cocoa powder and then drizzle on top when ready to serve.
