Mediterranean Beet Dip

Ingredients:

4 to 5 beets

1 cup sour cream

1 1/2 Tbsp. mayonnaise

3 garlic cloves, minced

1 Tbsp. Extra Virgin Olive Oil

1 Tbsp. fresh lemon juice

Salt and Pepper

1 package of Pita Bread

Directions:

1. Scrub and wash beets to remove any dirt and roots, cut in half and place in a saucepan and simmer about 30 minutes. Check with a fork to make sure they are tender all the way through.

2. Drain water from pan and replace it with cold water. Allow to sit for 10 minutes.

3. Using a spoon peel the outer layer off and place in food processor / blender to grate.

4. Place the beets into a bowl and add sour cream, garlic, Olive Oil, vinegar or lemon juice, mayonnaise, salt and pepper.

5. Mix well and keep in fridge for a minimum of 1 hour so the flavors can mingle together for a better taste. Best if prepared 1 day ahead to marry flavors.

6. Pre-heat oven to 400* and cut or tear pita bread into smaller chip sized pieces. Place on baking sheet and bake until crispy-- about 4-5 minutes.

7. Serve cold dip with warm pita chips and enjoy!
