Chocolate Peanut Butter Banana Pops

1 bag of Bittersweet Chocolate Chips (60% cocoa)

2 large bananas

Peanut Butter

Tooth Picks or Popsicle Sticks

Start by peeling your bananas and then slicing them into 3/4 inch slices. Place a small amount of peanut butter on one half of the slice (about the size of a blueberry) and then make a 'sandwich' with the other banana slice. Stick with toothpicks and place on a parchment paper lined baking sheet. Freeze for 2 hours before proceeding.

Place half of your chocolate chips in a small deep dish and microwave for 30 seconds, stir chips and microwave another 30 seconds until fully melted. Remove banana pops from freezer and dip in chocolate placing them back on the parchment paper. When finished place back in the freezer until solid and then place in a large Tupperware to prevent freezer burn. Keeps for 1 month. Makes 16-20.
