Herb Roasted Carrots with Feta

3 lbs medium carrots, cut 1/2" thick cut on bias

3 tbsp. olive oil

1/3 cup feta cheese crumbled

2 tbsp parsley and rosemary chopped finely

Preheat oven to 425* Toss carrots with olive oil and season with salt and pepper. Place on a foil lined, rimmed baking sheet. Roast until caramelized and tender about 25 minutes.

Transfer to large bowl and toss with herbs and feta, serve warm.
