RECIPE BY CONFESSIONS OF A NEW OLD HOME OWNER

Supplies:

2 cans salt free green beans

2 cans salt free sweet potatoes

4 cans of salt free tuna or chicken in water

bag of carrots

head of broccoli or cauliflower

box of brown or white bag rice (I use this kind because it's fast and easy)

Rosemary & Parsley

Directions:

Cut the cauliflower to small bite sized pieces. Peel and chop the carrots into 1/2 inch slices. Steam for 5 minutes. Drain can's of veggies and add to steamed veggies, steam for 5 more minutes until tender. Remove from heat and leave pot in sink to cool. Prepare 3 bags of rice (should make 6 cups) and add to veggie mix once cooked. Add tuna and tuna water, along with 1 tbsp of parsley and 1 tbsp rosemary. Mix well and put in large Tupperware. Refrigerate and use as needed. I try to not make more than a weeks serving at a time.

Note: You can change the veggies or the meat, just make sure it's all low / no sodium
