Blackberry & Rosemary Splash

RECIPE BY CONFESSIONS OF A NEW OLD HOME OWNER

6 oz. blackberries (washed and dried)

4 sprigs fresh rosemary

4 c. water

4c. sugar

1 c. lemon juice

To make the Simple Syrup:

Place the blackberries, rosemary, water and sugar in a large pot and bring to a gentle boil, then reduce to a simmer for 30-1hour. Blackberries should be mostly disintegrated, sugar dissolved and the water tinted red. Run through a sieve/strainer and discard seeds, pulp and rosemary. Add in the cup of lemon juice and store in the fridge for up to 1 month.

To make the drink:

Mix 1-2 tablespoons of syrup with either water or club soda to taste. Garnish with slice of lemon or blackberry.
