Decadent Bacon Salad

Bacon Vinaigrette

1/2 Cup Apple Cider Vinegar

2 oz. brown sugar

1 tsp. minced garlic

1 tsp. fresh thyme leaves, stems removed

1 tsp. lemon juice

5 pieces of maple flavored thick cut bacon, fat reserved*

2 tbsp Olive Oil

2 tbsp Walnut oil

Cut bacon into 1 inch small pieces and fry up the bacon on med-high until brown and crispy. Place bacon on paper towel to remove excess fat. While the reserved fat (about 3-4 tbsp.) is still hot place fresh thyme in and allow to cook until sizzling stops.

In a bowl combine vinegar, brown sugar, garlic, lemon juice, salt, oils and bacon fat. Whisk until combined and use while still warm. To re-warm simply place in microwave for 5-10 seconds to warm up and mix well.

Spring Mix

Bacon, crumbled

Pecans, chopped roughly

Green Apple, thinly sliced

Celery, thinly sliced

1. Handful of spring mix and top with crumbled bacon, pecans green apple and celery.

2. Top with warmed dressing and serve immediately.
