Collard Soup
1 large onion, chopped
2-3 cups of diced red potatoes
1-2 tbsp garlic, minced
Diced Ham
Smoked Summer sausage, sliced 1/4"
chicken broth
Collards
Pinch of cayenne
white beans, optional*
In a large stock pot, add a little bit of olive oil and throw in your onions and garlic. Saute until fragrant, about 1 min. Next add in your sliced collards and stir for a good 2-3 minutes until tender. Add all the remaining ingredients except the beans. Bring to boil, reduce and simmer for 15 minutes until potatoes are tender. Add beans if using and cook 5 more minutes. Serve hot with a slice of corn bread or rosemary bread.
**This recipe gets better with time, and is always the most flavorful on the second day. If your wanting healthier options, I buy turkey / ham by jennio and sub the summer sausage for smoked turkey kielbasa that I brown before adding in for extra flavor.**
