PROJECT
BREW-IT is a post secondary brewing and brewery operations program offering work-integrated learning in a real-life work environment. A fully functioning brewery provides hands-on learning experience while simultaneously connecting the community through an adjacent tap room. The vibrant atmosphere and community engagement inspires students to craft beer with the mindset of bringing people together to enjoy the experience.
BACKGROUND
With the Maker Culture reigniting the artisan culture of the Arts and Crafts movement, local craftsmanship is aimed at increasing face-to-face interaction and providing support within a community. These artisanal beers are made with a focus on sustainable development, the environment and improving local culture. Craft Breweries produce small amounts of beer and are known for their creative flavours, varied brewing techniques and overall enthusiasm for craft. The beer is known for its quality, diversity and unique advertising tactics. Craft Breweries have become a hot spot for people in the community to come and relax with friends and enjoy the lively atmosphere. By incorporating a brewery operations education program with a tap room, students gain expert professional training while also having hands-on experience. Students will have the opportunity to learn the business side of running a brewery, interact with the community and get real-time feedback. This educational/hospitality relationship provides a positive feedback loop by bringing the community together in a mutually beneficial way while also helping to fund the program.
PROJECT GOALS + VALUES
The design of Brew-it aims to facilitate education, creative minds and community engagement. A space where brewery students can learn from local brewmasters, brewery owners and industry professionals while also gaining hands-on experience in a public setting. Not only do the students get a full-circle educational experience, members of the community are supporting the students by visiting the brewery and getting to enjoy the vibrant atmosphere. The space will facilitate other creative individuals such as guest chefs that partner with the brew school to collaborate on new recipes, as well as local artists working with the students to design beer labels. This environment will help to empower the student’s passion for craft beer by helping them to connect with the community, build strong relationships and be around other creative minds. The warm and inviting atmosphere of the tap room and tasting lounge intends to take people out of the hustle and bustle of their daily lives and provide them with an uplifting, comfortable environment.
CONCEPT
A retro-inspired brewery school and taproom engages the community through a dynamic, bold and playful atmosphere. Artisanal elements bring craftsmanship to the forefront while reminiscent forms and finishes create a nostalgic flare. The spatial planning intends to bring people together to build memories and share knowledge while still prioritizing necessary privacy requirements.

MAIN LEVEL FLOOR PLAN
Natural colours and textures contrast subtle industrial elements, eliciting a warm and comfortable atmosphere. Users are confronted with the host stand upon entering the tap room, with the central staircase creating a grand backdrop while also housing the main bar. The staircase creates an interesting volume over the bar and provides an exciting focal point with the rest of the tap room wrapping around. After delivering a small survey to people in the community, one of the most notable takeaways was the desire for different types of seating options. Each seating cluster promotes a slightly different experience, with banquettes and lounge seating in the sunroom on the west, large high-top communal tables in the center, large booths to the south and more intimate banquette seating to the east of the entrance. A ramp leads up to the brewery where the beer is made and students have interactive classes. To the left of the brewery is the bottle shop, with its own separate entrance from the street for those wishing to visit the store without going through the tap room.

When entering the second level from the central staircase, users are welcomed into the tasting lounge. This is an elevated experience with a more luxurious feel to the tap room, while still maintaining the retro inspired theme. This space can be reserved for private events or just for a different experience. The tasting lounge is closed off from the rest of the space to provide a level of privacy to the educational component on this floor. In the left corner you can see the lab, this space is equipped with storage for all of the testing equipment required for the beer making process, as well as sinks to wash the equipment. The classroom is set up for theory learning with a large smart board and desks for all the students. The staff area features a lounge, meeting room, private washroom and 3 offices for the 3 instructors. The student lounge features individual lockers for each student where they can safely store their belongings, two washrooms, a kitchen featuring beer taps and different seating options for students to study or unwind between classes.

Brew-it has been designed to bring the community together to facilitate learning and social interaction. Having completed the Interior Design program at MRU, I've seen the benefits of a hands-on learning environment and believe that creative people need to be able to implement theory into practice. By having a brewery school connected to a hospitality space, students have the opportunity to learn about the beer, make the beer, and interact with the community it creates, all under one roof.
