Sweet Potato Souffle Pie
2-3 sweet potatoes, peeled, diced and steamed to fork tender
1/3 cup butter
1 cup sugar
½ tsp. salt
2 eggs, beaten
1Tbsp. vanilla
2 Tbsp. flour
½ tsp. nutmeg
½ tsp. cinnamon
½ tsp. ground cloves
Mash the sweet potatoes in a mixing bowl. Add remaining ingredients and pour into prepared pie crust.
Topping
1 cup chopped pecans
½ cup butter
1 cup brown sugar
1/3 cup flour
Mix ingredients together and spread over sweet potatoes. Bake at 350 degrees for 35 minutes. Can be made a day ahead.
