It is also mentioned in one of the articles that there are 2 main ways in which water freezes, one is almost instantaneous, the other is much slower. Due to the gasses leaving the hot water before it freezes, the faster freezing method can be across a much larger amount of the fluid which can give the impression that the water has completely frozen when actually there is still a large amount left to freeze it is just spread around the container as opposed to all being in the same area, as is the case when gasses have not been removed already.
