Flash Freezing

How to instantly freeze a beer

    a. Place an unopened beer in the freezer until it is nearly frozen but still 100% liquid

    b. Take the bottle out the freezer and take to a hard surface

    c. Take the top off the beer, hold the bottle by the neck and hit on the hard surface in order to create                   bubbles (do not smash the bottle)

    d. Watch the bottle freeze!!

For this phenomena there are two two theoretical explanations:

1. When the top is removed from the bottle and bubbles produced the gas expands and cools down. As bubbles form they remove heat from the beer which cools its temperature. As the beer is just above freezing temperature when the additional heat is removed the beer solidifies.

2. Before opening the beer there are lots of CO2 molecules dissolved in it. These CO2 molecules reduce the freezing temperature of the beer. Therefore when the bottle is opened, the pressure in the bottle increases and CO2 is released as the beer is now supersaturated. In turn the freezing temperature of the beer rises to above its current temperature and instantly freezes.
