I've spent a lot of time converting many baking recipes from volume measurements to weight. This is my go to table for quickly finding a conversion. Whenever possible I include my source for the conversion, although I tend to check multiple sources.
All measurements are based on 1 cup of the ingredient converted to grams. Through a bit of math and spreadsheet magic this table can quickly convert a volume amount to grams.
This table isn't perfect, nor is it complete by any means, but it's the table I use when I convert an ingredient from a volume measurement to weight.
Keep in mind, the weight of an ingredient from one source may be slightly different than another source so minor adjustments may need to be made in your conversions. In any circumstance measuring my weight will be a lot more accurate than measuring my volume.
For ingredients, like flour, that can be measured by volume in lots of ways (sifted / unshifted, packed down / not packed, shaken / not shaken) this table assumes a proper measuring technique (which may change from ingredient to ingredient). The recipe you are trying to convert may assume a volume measurement technique that is different from the technique assumed by this table. Just keep in mind you may have to make adjustments and do a bit of experimenting when you switch your recipes to weight measurements.
