I was very reluctant to get an Instant Pot at first because I'm not one to buy trendy kitchen gadgets. But, I had so many people telling me how wonderful they are, I finally decided to buy an eight quart one. I love using it so much I bought a three quart as my second one. If I had to do all over again I wouldn't change a thing.
When I suggest others buy one I almost always suggest the 6 quart, which is the most common size for those getting started with Instant Pot cooking and the perfect size for an average sized family or those who like leftovers. For those who do most of their cooking for one or two people the 3 quart "mini" might be a good starting place. No matter what size you decide on, I suggest getting the Instant Pot brand and stick with the basic model, they always get the best reviews.
I've tried to make yogurt on and off quite a number of times over the years and was never really "successful". Yes it was yogurt but not nearly thick enough... until... wait for it... I got my Instant Pot. Proper incubation with the Instant Pot makes it much thicker than I could ever achieve otherwise. I usually start my batch around 7:00 PM, cook it for an hour, cool it and let it incubate for about 9:00 hours +/-. When I wake up in the morning, it's done.
I have tried LOTS of ways to make "hard boiled eggs" and my favorite was always steaming them on the stove top. When I got my Instant Pot I knew right away I had to find some recipes and start experimenting. I quickly found using an Instant Pot was even better than the stove top method. The yolks come out perfect, the whites are soft and tender and they peel like a dream!
I've used dried beans to make all kinds of things. Re-hydrating them can sometimes be a challenge, especially when they have bean [see what I did there?] sitting on the shelf for too long. Ask my dad about the baked beans I made one time, or was it chili?
I've included the various methods I've used in this single recipe but the one that always works best for me is the Instant Pot method. I also suggest adding the salt and baking power as listed, they really do help. So far, the IP method and times have worked well for me no matter how big or small the beans are.
