When I want to make a sweet, hand held treat and I don't feel like making cookies I tend to lean toward making some kind of bars or squares. Sometimes I just take a batch of cookie dough and dump it in a baking pan. The mixing effort is the same but I can cut the baking and cleanup effort down by making it in one pan instead of six.
When I decide to make proper squares it's usually brownies or blondies because they are SO quick and easy and I generally have the ingredients for them on hand. It's easy to get tired of a good thing, like brownies, so I like to have other options or find ways to change up a recipe I know well. All of the recipes below can be modified with add-ins or changed to a completely different flavor.
The Italians make so many great cookies and biscotti is certainly among them, especially for those who like a cookie that is less sweet.
I've been wanting to make these for many years and I finally decided to give them a try.
This is a work in progress recipe as I think they can be improved. I have gotten a lot of compliments on them already so they are worth trying as is.
This cookie bar recipe is based on recipes from the Philippines. They are buttery, chewy and packed with dates and nuts.
It's not often that I use nuts in dessert bars or cookies but they have their place in this recipe, I would even say the recipe wouldn't be the same without them. In my research, the original recipes all use walnuts but I'm not a fan of walnuts so I use pecans instead.
This recipe is based on "My Favorite Brownies" and has a texture very similar to the brownies. I developed this because I wanted to make a batch of black and white brownies.
I use this recipe as a base for lots of different flavored bars by swirling in jams, jellies, nuts, etc.
These are my absolute favorite brownies. I've made the wheat version for many years and I love them so much I hesitate to try a new recipe.
The GF version is just as good as the original, if not better, and can be tweaked to add all kinds of goodies...except nuts, nuts should never be found hiding in brownies.
I've added some flavor additions to this formula. Check the bottom of the recipes or other tabs for more ideas.
I love peanut and marshmallow together so much that I will sometimes take a spoonful of marshmallow cream and a spoonful of peanut butter, mix them and eat it just like that as a treat.
These squares take that flavor combination up another level.
I suggest making these with homemade marshmallows. They are so delicious!
