Rolled cookies are typically made from a stiffer dough that is flattened and with a rolling pin. The dough is then cut into shapes with a knife, pizza wheel or cookie cutters.
My mom and grandmother made these many years ago as a Christmas cookie because they were "healthier" for my grandfather. They have since forgotten they even made them, but I haven't. These are another favorite of mine and I make them a few times a year especially for Christmas.
I'm terrible at using a piping bag to decorate so I usually dip them in royal icing.

I'm not a huge Graham Cracker fan (probably ate too many as a kid) but these are good for snacking on or using in any recipe, such as a cheese cake crust or s'mores, calling for a Graham Cracker.
This recipe is pretty forgiving so if it's too sweet, lower the sugar, if it's too much cinnamon for taste, reduce it.

When I was a kid, my grandmother and grandfather always had cookies in the house when we visited them. And sometimes those cookies would include "Crispy Windmill Cookies". It's been years since I've had any and when I bought a box they weren't quite what I remembered them being. I'd like to think my recipe is closer but I'm not 100% sure. In any case these are very good to try.
